This dry rub is ideal for any type of chicken. If you mix it up now and put it in a jar with a tight lid, it can be kept for weeks. Then it is ready to use on your favourite piece of chicken before you either put it on the grill or cook it in the oven.
I’ve used it in my Crispy BBQ Chicken Wings recipe to make delicious crispy wings.
Coat your chicken in the dry rub and leave it to “marinate” for as long as possible. For the best results, coat chicken the night before cooking and put it covered in the fridge until ready to use.
Adjust the amount accordingly. Recipe can be easily doubled so that you have plenty of rub for the next time.

Use this rub on any piece of chicken to enhance the flavour.
1 T chili powder
1 T paprika
1 T onion powder
2 tsp salt
1/2 T light brown sugar
1 tsp cumin
1 tsp garlic powder
1/4 tsp cayenne pepper (adjust to taste)
1 tsp dried mustard powder
1/2 tsp dried thyme
1/2 tsp dried oregano
1/2 tsp black pepper
- Mix all ingredients in a small bowl. Use immediately or place in a well sealed container for storage.
- To apply rub, simply coat any type of chicken, allow to marinate up to 24 hours covered in the refrigerator.
