Instant Pot Pulled Pork Sandwich

This Instant Pot Pulled Pork is easy and delicious and by using the Instant Pot, I can be done in a fraction of the time it usually takes.   

How to get the best flavour

Once you have your piece of Pork Shoulder, you create a dry rub for your meat to add some extra fantastic flavour.  I think it’s very important to sear the meat after you add your dry rub to seal in all the delicious spices.  The Instant Pot is great for this because you can do everything in one pot.

How To Make Instant Pot BBQ Pulled Pork

  • Trim the fat: Using a sharp knife, trim some of the fat off your pork shoulder if it has too much.
  • Make the dry rub: In a small bowl combine all the dry rub ingredients together and mix. Rub the dry rub all over the pork getting into the nooks and crannies. If you don’t have the listed ingredients in your Pantry, not to worry. Just mix whatever you have. It will add extra flavour. Even just the salt, pepper and garlic will be fine.
  • Get the Instant Pot ready: Turn the Instant Pot to the SAUTE setting. Add oil and once your instant pot is ready, add the pork.
  • Sear the meat: Cook the pork, turning on all sides to brown. If your pork is too large to handle, feel free to cut it in half and do 2 different batches. Should take about 5-10 minutes per batch. Transfer to a plate and repeat with the second half. Press the CANCEL button on your Instant pot.
  • Combine the dish: Add all the meat back to the instant pot and pour your favourite BBQ sauce over. Set the Instant Pot to the Meat/Stew setting and set the timer to 90 minutes.
  • Shred the pork: Wait until the natural release cycle is complete, should take about 15 minutes. Remove the pork from the pot to a large bowl, and using 2 forks, shred. I usually remove any extra fatty bits at this point. Add 2 cups of sauce to the pork and mix.
  • Serve: Serve on hamburger buns by adding pulled pork, some more sauce and topped with this simple coleslaw recipe.

Storing:

This pulled pork will keep for 3 – 4 days in an airtight container in your fridge or wrap it up in some plastic wrap and aluminum foil and it will keep in your freezer for up to a month.

Leftovers:

Try this amazing Pulled Pork Mac and Cheese if you have any leftover pork. It’s also great in tacos, with eggs, or on pizza.

Delicious pulled pork in a fraction of the time with the Instant Pot

INGREDIENTS

  • 2-3 lb boneless pork shoulder

  • 2 T olive oil

  • Shredded cabbage or coleslaw

  •  Hamburger buns

  • Dry Rub
  • 2 tsp chili powder

  • 2 tsp paprika

  • 1 tsp garlic powder or use a clove of minced garlic

  • 1 T dried mustard

  • 1 tsp ground black pepper

  • 1 tsp salt

  • Sauce
  •  1 cup Favourite Barbeque Sauce (I love Sweet Baby Ray)

  • 1 cup ketchup

  • 2 T cider vinegar (or white wine vinegar)

  • 3 cloves garlic chopped

  • 1/2 cup chicken broth or water

DIRECTIONS

  • Using a sharp knife, trim any large fatty parts from your pork shoulder.
  • In a small bowl combine the dry rub ingredients together. Rub the mixture all over the pork getting into the nooks and crannies.  
    Turn the Instant Pot to the high SAUTE setting. Add oil and once your instant pot reaches the desired temperature (the timer will start to count down), add the pork.
  • Cook the pork, turning on all sides to brown. If your pork is too large to handle, feel free to cut it in half and do 2 different batches.  Should take about 5-10 minutes per batch. Transfer to a plate and repeat with the second half. Press the CANCEL button on your Instant pot.
  • Add all the meat back to the instant pot and pour your favourite BBQ sauce and other sauce ingredients over the meat. Set the Instant Pot to the MEAT/STEW setting and set the timer to 90 minutes.
    When done, wait until the natural release cycle is complete, should take about 20 minutes. Remove the pork from the pot to a large bowl, and using 2 forks, shred.  If you find any large pieces of fat, you can remove and discard.
  • Turn your Instant pot setting to SAUTE again and reduce your sauce by about half (about 10 minutes).  Add about 1 cup of sauce to the shredded pork and stir. 
  • Serve on hamburger buns with coleslaw and extra sauce.

    Leftovers can be used in eggs, on pizza, in tacos and best of all, mixed right into Pulled Pork Mac and Cheese.
